friend Shara gave me this giant zucchini from her garden.

now, I should tell you that since these photos were taken, the poor zucchini has been mercilessly shredded and baked into cupcakes.
I used this recipe for the cupcakes and they turned out very well. I also made a batch of oatmeal-nut-zucchini cookies. I can't remember where I got the recipe I used for that one. sorry. I mangled that one enough that it probably wouldn't be worth recommending anyways.
and here, for everyone's future reference, are a few more zucchini recipes I really want to try:

PS. so far I am loving this Texas adventure I'm on.

One of my favorite places to eat has a zucchini soup. I thought it was very odd until I tasted it. Now I find it delicious. :)
where is this place?
I don't know if I'd love a zucchini soup. but since there are thousands of zucchinis around at this time of year, it's got to be worth a try.
